Since taking over the restaurant in January 2014, chef Laurent Chabert has been creating a cuisine that is shaped by nature and the Mediterranean. In this fusion of flavors, textures, local and seasonal products, organic ingredients are always favored and each product is presented in its entirety.
At 36 years old, the chef from Allier is a passionate fan of raw materials. His cuisine is characterized by a precise search for the right preparation, a balance of flavors and a limited use of animal fats.
After training that took him to the slopes of Val d’Isère in winter and Corsica in summer, he worked alongside chef Antony Tempesta, with whom he had already earned a star for the La Becca restaurant, before Gérard Bertrand entrusted him with the management of his restaurant l’Art de Vivre at the age of only 26.
This award honors the dedication of its entire team, which has searched for local producers and artisans in the kitchen, dining room and garden to satisfy the appetites of gourmets.

In the heart of the Château l’Hospitalet Wine Resort, Beach & Spa, a 5-star establishment in Narbonne, Chef Laurent Chabert and sommelier Pierre-Alexis Mengual offer a truly unique tasting experience in a completely redesigned environment between land and sky.
To fully immerse guests in the intricacies of vertical cuisine, Chef Laurent Chabert opened the brand new Moon Room at Château l’Hospitalet in March 2023. This room is dedicated to a sensory experience in a cosmic décor. The food unfolds to the rhythm of the celestial bodies and nature, with dishes and wines complementing each other, while the sommelier sets the tone and accompanies each course with his expertise.
The Team
Guests are warmly welcomed and invited to a unique gastronomic experience, staged by the chef and his team in the room. Originally from Bordeaux, Pierre-Alexis Mengual, head sommelier and director of our rooms, has a self-taught career, motivated by a passion for gastronomy.
