The restaurant is a true flagship for Mediterranean art de vivre and modern cuisine and has been run by head chef Laurent Chabert at Château l'Hospitalet for eight years. He is now joined by head sommelier Pierre-Alexis Mengual to offer a unique experience of vertical cuisine in a completely redesigned setting, nestled between heaven and earth. Here, nature is respected and celebrated; it is a central part of the décor, visible through large glass windows and also reflected on the plates - in perfect harmony with the outstanding organic and biodynamic wines from Domaines Gérard Bertrand.

The restaurant L’Art de Vivre in Gérard Bertrand ‘s vineyard in the south of France offers an exceptional culinary experience and has been awarded the Green Michelinstar for its sustainable approach. Mediterranean dishes are created here under the direction of head chef Laurent Chabert, in harmony with nature and carefully matched to the biodynamic and organic and organic wines from Gérard Bertrand ‘s various estates. The harmonious combination of food and wine in a unique ambience between heaven and earth makes earth makes L’Art de Vivre a true pleasure destination for gourmets and wine lovers.

At the vineyard of Gerard Bertrand’s Chateau l’Hospitalet, nestled in the La Clape mountains, chef Laurent Chabert sources some of his ingredients, including aromatic herbs, directly from his own kitchen garden, directly from his own kitchen garden and also uses high-quality, mostly organic products from the region. He creates colourful, fragrant dishes such as grouper grilled over a wood fire or braised aubergines, glazed with tomato juice.

“Just like in the vineyards , the team at L’Art de Vivre works also works in harmony with nature in the kitchen. Many ingredients come from the winery ‘s farm, which is farmed according to biodynamic principles, while fish from the Mediterranean is caught using sustainable methods. The furniture is made from environmentally friendly materials, the table linen is woven in France and the crockery comes from local potters.” – Laurent Chabert

I had the great pleasure of experiencing the Cuisine Verticale “Dinner – Flower Biodynamic Day”. This dinner was a true feast for the senses – each course was perfectly paired with exceptional wines that masterfully complemented the flavours of the dishes. The quality of the ingredients and the delicacy of the preparation made each dish a special treat. The harmonious combination of first-class cuisine and exceptional wines created an unforgettable flavour experience:

  • Biodynamic amuse-bouche broth
  • Mediterranean red mullet prepared with calamansi vinegar, Mas Soulas No. 1 oyster tartare, fennel, Oscietra caviar from Sturia, almond milk with dill oil
    Wine: Clos du Temple 2022 – AOP Languedoc Cabrières
  • Courgette flower from Celeyran, filled with fine Mediterranean prawns, candied lemon, warm prawn carpaccio, nettle puree and prawn bisque
    Wine: Aigle Impérial 2015 – AOP Crémant de Limoux
  • Mediterranean monkfish, grilled, slow-cooked, yellow chanterelles from the Eastern Pyrenees, miso beurre blanc
    Wine: Villa Soleilla 2022 – VDF
  • Tomato sorbet, “La Grappe de Montpellier” vodka gel, celery emulsion, spicy coriander
  • Mont-Royal pigeon, poached and seared fillet, tempura leg with parsley, Celeyran chard ragout and Lacaune pork trotter, red wine jus reduction
    Wine: Plantabelle 2019 – AOP Languedoc-Cabrières
  • Rhubarb from Argelès-sur-Mer, braised and caramelised, mastic pistachio syrup and almond milk ice cream
  • Figs from Château Hospitalet, fresh, overripe and as compote, Diplomat cream with olive oil, fig distillate, wild juniper berry sorbet
    Wine: Legend Vintage Maury 1975

A visit to the restaurant and an overnight stay at the beautiful Chateau l’Hospitalet are not to be missed. Anyone travelling in the south of France must stop by here!

– Thursday evening, Friday evening, Saturday lunchtime and evening, Sunday lunchtime and evening, Monday lunchtime and evening. Winter opening hours – From 30 September to 1 May:
– Thursday evening, Friday lunchtime and evening, Saturday lunchtime and evening, Sunday lunchtime and evening. ‍Annual closure on 16 December – Reopening on Thursday 1 February for evening service.
Groups of 8 people or more – Exceptional opening hours possible outside opening days.
